In the present project, our aim is to conduct outreach activities with the focus on added values of a resource often combined with negative impacts, the wild goose. The product will be a cookbook with traditional, international and new modern cuisine recipes combined with anecdotes and popular facts about geese. The text will be development by a professional author in combination with facts given by researchers. An online meeting and a workshop will be conducted where project partners collate and develop the content of the book. Two restaurants will be involved in the project. These are restaurants where seasonally, locally-sourced, food is essential in their menus. The book will be published by a reputable publisher.
